Microwave Peanut Brittle

INGREDIENTS:

1 cup white sugar
1/2 cup light corn syrup
1 cup salted dry roasted peanuts
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda


DIRECTIONS:

• Butter or spray a cookie sheet.

• Combine sugar and corn syrup in a large glass bowl.

• Microwave on high for 4 minutes. (Bowl will get hot)

• Stir in peanuts and microwave on high 3 1/2 minutes more.

• Stir in butter and vanilla and microwave for 1 1/2 minutes.

• Stir in baking soda until light and foamy.

• Pour onto cookie sheet and spread as thin as you can get it.

• Cool completely and break into pieces and serve.



I spray my glass bowl and I use and spray a wooden spoon for stirring.
You'll be sorry if you try this in anything other than pyrex or glass. lol!
Even easier if you have a glass 4 cup measuring cup; you've got a handle to hold while pouring that way.
