I should have noted that this is my lower-calorie/diabetic version of this recipe. It was still VERY rich & creamy. My brother & sister in law couldn't tell it was low cal. sunny

*Turtle Pumpkin Pie - Serves 8 to 10

INGREDIENTS

1/4 cup caramel ice cream syrup (fat free)
1 graham cracker pie crust (9oz or 6oz but 9oz is best)
1/2 cup chopped pecan pieces
1 cup cold (skim) milk
2 pkg. (4 serving size) jello vanilla (or cheesecake) flavor instant pudding & pie filling (sugar free)
1 (15oz) can of pumpkin
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1 (8oz or larger) tub cool whip (fat free)


DIRECTIONS

· Pour 1/4 cup caramel syrup into crust.
· Sprinkle with 1/2 cup pecans pieces.
· Combine milk, dry pudding mixes, pumpkin and spices in bowl.
· Whisk until blended - a couple minutes.
· Stir in 1 1/2 cups cool whip.
· Spread evenly onto crust. (There will be a lot)
· Top with remaining cool whip. Refrigerate about an hour before serving.
· Drizzle a tablespoon or more caramel topping on top.
· Sprinkle some pecans on top (if desired) just before serving.
· Store leftovers in refrigerator.

I made this last night & it was sooooo yummy!


* No turtles were harmed in making this pie. lol! lol! lol!
